Forest Nachos



 Preparation time:15 min

 Cooking time: 45min

 Serves: 4 portions


  • 1 cup corn flour
  • 1 cup integral flour
  • 1/2 cup water
  • 1/2 tsp. salt
  • 2 tbsp. butter
  • 1 cup milk
  • 150g homemade smoked cheese
  • 150g homemade trappist cheese
  • 100g homemade soft cheese
  • 150g homemade bacon
  • 1-2 organic peppers
  • handful of organic cherry tomatoes
  • handful of parsley

Do not forget to bring your sombrero and poncho! This time we will travel to beautiful Mexico! Well… Not really… But! We give you 100% that you will taste Mexico in your mouth! Crispy coal baked nachos with triple homemade cheese sauce, homemade smoked bacon and organic veggies.


Corn tortilla chips:

  1. Prepare wooden dip cookware.
  2. Mix 1 cup of corn flour and 1 cup of integral flour.
  3. Add 1/2 tsp. of salt. Mix it.
  4. Add 1/2 cup of water. Knead well.
  5. Form a ball, cover and leave to rest for 20 min.
  6. Prepare your cutting board.
  7. Cover board with flour to prevent corn dough from sticking to it.
  8. Attenuate the dough. Form tortillas and bake it on fire for 10-15min. until it has chips texture.

Triple homemade cheese sauce:

  1. Prepare cutting board.
  2. Grate 150g of homemade smoked cheese, 150g of homemade trappist cheese and 100g of homemade soft cheese.
  3. Preheat the pan.
  4. Melt 2 tbsp. of butter.
  5. Add 1 hand of flour.
  6. Mix everything well! Wait for butter to fully melt.
  7. Add 1/2 cup of milk. Mix well again! Cook for few min.
  8. Add 3 cheeses. Mix again.
  9. Add 2 full tsp. of grinded pepper mix. Mix well again!
  10. Cook for 5 min. Let the cheese fully melt. Do not forget to mix!
  11. Transfer triple homemade cheese sauce into ceramic pot. Place on coals for preventing cheese from hardening.

Filling and dressing:

  1. Prepare cutting board.
  2. Slice & dice 1-2 organic peppers.
  3. Slice handful of organic cherry tomatoes.
  4. Preheat the pan.
  5. Fry 150g of homemade bacon.
  6. Serve everything together how you like it.
  7. Finish off the dish with handful of chopped fresh parsley.
  8. Enjoy! Buen Almazan!
