STEP BY STEP
1. Mix 2 hands of flour with 2 whole eggs, pinch of salt and 1 tbsp. of olive oil. Mix and knead well. Make a handful of spaghetti from the dough with the special utensil.
2. Boil the water, salt it and then cook spaghetti for 7 minutes.
3. Slice 250g of Italian Guanciale, chop 4-5 garlic cloves. Fry everything for couple of minutes on the medium heat.
4. Add cooked spaghetti, salt and add black pepper, handful of grated parmesan cheese and 4 egg yolks. Mix everything well. Add grated pecorino cheese and finish off with few drops of chopped fresh parsley.
5. Enjoy! Bon Almazan!
